Nice Cream. I'm sure you've heard the term before, but what is it exactly? "Nice Cream" is a new'ish mainstream term for a vegan version of ice cream. It is made from frozen fruit that is blended with water or alternative nut or grain milk and is comparable in consistency to soft-serve ice cream without the added sugar or saturated fat. It can be made with a variety of blending appliances, like a Ninja or NutriBullet and can be made in less than thirty seconds. Frozen fruit of course can be purchased from the freezer section at your local grocer (please look for recyclable packaging), but with a minor bit of preparation you'll find that it is actually cheaper to buy fresh fruit and freeze it yourself.
Cut seasonal fresh fruit into 1 inch pieces and place in freezer-safe container for a few hours or overnight. I us a NutriBullet to make my "nice cream" that comes with two size blending cups. Use the small cup for a single serving and the large cup for 2 servings. Below is the recipe for my favorite nice cream concoction, with measurements for a single serving.
1 1/2 Frozen Banana
1/4 C. Ripe Avocado (optional, but I like the creamy consistency it adds)
1-2 tbsp. Ground Flaxseed
1 tsp. Ground Cinnamon
Unsweetened Almond Milk or Water, filled to the "Max Line" (~1 C. or 8oz.)
Add all of your ingredients and blend until smooth.
