Yam Rice Confetti

While doing some traveling, I recently discovered what yam rice was while dining at Prasad in Portland, Oregon. Prasad is an all raw vegan restaurant with some really creative menu items, like their El Dorado salad. Here is where I first discovered that you could eat raw yam without any issues and that it was really tasty! Since then, I have added several different spices/flavor combinations and found this one to be my favorite so far. You will need a food processor for this recipe.

1 Raw Yam, peeled and cubed
1 Apple, cored
1 Garlic Clove
1/8 C Sundried Tomatoes

Add all of the ingredients to a food processor and voilĂ ! Serve over a bed of fresh spinach with a sprinkle of walnuts and dried cranberries.
