Simple Pea Soup

I recently wrapped up a 10 year career of upper level studies (thank you, thank you) and I am about to have a whole lot of free time on my hands. Obviously, this wasn't the case these past few months and cooking had definitely fallen to the wayside. Even though my time was very limited, I still found ways to make simple, quick and nutritious meals. One easy meal I made a lot was cold soup--and it's not at all what you think. Just 2 ingredients (plus salt and pepper) and lots of room for creativity.

For this recipe, you will need any kind of blending appliance. I used a NutriBullet with the large size blending cup. Good hot or cold.

1 15oz. can Garbanzo Beans, with liquid
1 15oz. can Sweet Pea, drained
Salt & Pepper, to taste

Put garbanzo beans and sweet peas in blending appliance and blend until smooth. Add salt and pepper to taste. Heat if you prefer.

Match garbanzo beans with other veggies, like corn for a corn "chowder," cooked butternut squash or sweet potato. Seriously Simple.
