Outré Guacamole

Avocados are all over South Florida right now. I am so fortunate to have neighbors that love to share. Here are two different guacamoles that I make, aside from the traditional dip everyone is accustomed to:

Guacamole #1

2 Avocados
2 Cans Cannellini Beans
2 Tomatoes
1 Yellow Bell Pepper
Juice of Lime
1/2 Red Onion
3 Cloves Garlic
Salt and Pepper, to taste
Rustically mash ingredients together w/fork

Guacamole #2

1 Avocado
1 C. Shelled Edamame
1 Abobo Pepper
1/2 C. Cilantro
1/4 Onion
2 Cloves Garlic
Juice of Lime
Salt and Pepper, to taste
Dab of water to smooth in food processor, if necessary
