2 Apples
1 C. Raw Cashews
1 C. Raisins
6 tbsp. Course Ground Grey Poupon Mustard
4 tbsp. Orange Blossom Honey
2 tbsp. Braggs Apple Cider Vinegar
2 tbsp. Fresh Chives, finely chopped
Cube tofu and dice 1 apple and transfer into baking dish. Combine mustard, honey, and apple cider vinegar with all other ingredients except for the second apple. Pour half of the marinade over the tofu and let marinade for at least an hour. Dice the second apple and add to the second half of the marinade to place in the fridge for later. After the tofu has marinated for one hour place in over at 375 degrees Fahrenheit and place in the over for 20-25 minutes, turning the tofu half way through. Check after 25 minutes, and continue to turn tofu and place back into oven for 5-10 minute intervals (turn each time) until golden brown. When the tofu is baked to your desire, remove from oven and let cool before coating with the second half of the marinade. Serve alone, or on top of a bed of mixed greens.
