1 Sweet Potato
1/2 C. Ripe Avocado (personally, I prefer Florida Avocados for their sweetness)
Sea Salt
Preheat oven to 400 degrees Fahrenheit. Slice sweet potato into thin discs. Lightly brush each side with coconut oil and sprinkle topside with sea salt. Bake on lower rack for 10 minutes. Flip discs and sprinkle with sea salt. Bake for another 10 minutes. Remove from oven, and while cooling, mash avocado. Place a dollup onto of each disc. Easy peasy...
