This was recreated from a quinoa salad I had at Whole Foods. The salad that I tried additionally had chunks of mango, but we ate our last one before I decided to make this salad. It is the beginning of mango season, though and when I make it again, we'll have plenty from our neighbor's tree.
1 C. Quinoa
1 1/2 C. Water
2 tbsp. White Balsamic Raspberry Blush Vinegar
1/2 Red Onion
1 Red Bell Pepper
1/2 C. Shelled Edamame
1/2 C. Raisins
1/4 C. Sliced Almonds
1/4 C. Unsweetened Shredded Coconut
1/4 C. Cilantro
Juice of 1 Lime
Make sure to rinse quinoa before cooking to remove any bitter-tasting saponins. Here is the best advice I found for making perfect, fluffy quinoa. Combine the other ingredients in a bowl, and once your quinoa is done, combine all ingredients and serve. Delish.
