Three Bean Chili
1 small Onion
4 Cloves Garlic
2 C. Vegetable Stock
1 Green Bell Pepper
1 Red Bell Pepper
1 can Pinto Beans, drained and rinsed
1 can Black Beans, drained and rinsed
1 can Red Kidney Beans, drained and rinsed
28oz. can Diced Tomatoes
1 tbsp. Chili Powder
1 tsp. Paprika
1 tsp. Dried Oregano
2 tsp. Cumin
1 tsp. Crushed Red Pepper
Sea Salt and Ground Pepper
Optional: I typically do not eat fake meat products, but I decided to try making this with Lightlife Smart Ground, which is a textured soy protein that has the same consistency of ground beef. It is very lean, so it does not have the same richness as beef, but with the right seasoning I think you could pass it off as ground turkey. Not my thing, but whatever. Cook via directions on the box.
Sauté onion and garlic until translucent in a small amount of vegetable stock. Add the rest of the ingredients and bring to a boil for 1 minute while stirring. Turn to a simmer and cook, covered for up to 1 hour.
