Harvest Fruit and Wild Rice Salad w/Raspberry Dressing

2 C. Wild Rice
4 C. Water
1/8 Salt

Add wild rice, water, and salt to pot and boil for 1 minute. Turn heat to low, cover and simmer wild rice for 50-60 minutes.

2 Bunches of Scallions with 1 in. tops, thinly sliced
1 C. Chopped Pecans
2 C. Seedless Red Grapes, halved
3 Granny Smith Apples, chopped
3/4 C. Dried Cranberries or Currants
3/4 C. Dried Apricots, chopped

Combine cooked wild rice with scallions, pecans, grapes, apples, and dried fruit. Coat with raspberry dressing (see recipe below), cover and chill until served.

Raspberry Dressing

1 C. Fat-Free Raspberry Vinaigrette
2 tbsp. Orange Juice
2 tbsp. Honey (imitation is fine)
2 tbsp. Balsamic Vinegar
1 tbsp. Grainy Dijon Mustard
1/2 tsp. Salt
1/4 tsp. White Pepper
