Brown Rice and Cabbage Salad

Handful or 2 of Shredded Red Cabbage
1/4 C. Nuts (Pine Nuts or Pecans)
1/4 C. Dried Fruit (Currants, Prunes, Cranberries, or Apricots)
1 tsp. Ginger, minced
1 1/2 tsp. Cumin
1/2 tsp. Coriander
1/2 tsp. Curry Powder
Sea Salt
Fresh Ground Pepper

1 1/2 C. Brown Rice
3 C. Water

Add brown rice and water to pot and bring to boil for one minutes. Reduce heat to low and cover for ~40 minutes, or until rice is fluffy.

Shred cabbage into thin shards. Once rice has finished cooking, mix all ingredients together and season with sea salt and black pepper to taste.
